I had the opportunity to try the new Progresso Panko bread crumbs when I visited General Mills. They are the bread crumbs we used to make these delicious oven-fried chicken tenders:

These bread crumbs are super tasty and they help you to put together a simple but elegant dinner in just a few more minutes than it takes to heat up those pre-made frozen chicken nuggets.
There are also some delicious looking recipes here that were put together by Food Network star, Michael Chiarello. I am dieing to try the Spinach Arancini, yumm!

A lot of times I like to make a veggie and chicken casserole. Panko bread crumbs are great to use for crunchy toppings. I love them.

I have a lot of quick go to dinners. I either use something I have already made and frozen, do store bought taquitos, defrost some hamburger and have tacos, do spaghetti, or bake my flash frozen chicken (that I have just for such times). I menu plan a lot but things change, and since I am always stocked up on things, I have a lot of easy dinner options.

Soup and quesadillas — We have a constant supply of Progresso chicken soup in the cupboard and the ever present corn tortillas and grated cheese in the fridge. Whatever vegetables or meat is around is fair game for the quesadilla, including acorn squash, mushrooms, etc. It’s a more Cal-Mex take on the soup and grilled cheese combo.

I usually go for pasta and canned sauce. All I have to do is grill some chicken, and dinner is ready in less than 20 minutes!

My go to Dinner is Italian Chicken.
I take a bottle of Italian Dressing and pour over chicken then just throw it in the Oven until done. Add a green Salad and Yum!

My Quick dinner is my cheesey chicken noodles. It is so easy to make and fast! I usually have everything on hand, and we have a bagged salad with them…..so good.
To make,
Boil one bag chicken tenders (I buy them at Aldi’s for 5.99)
When chicken is cooked add one bag egg noodles (.99 Aldi) and boil
When noodles are done drain most of the water, and add a can of cream of chicken soup (.59 Aldi) and one bag shredded cheddar cheese (1.98 at walmart). Dump a bag salad (.99) in bowl add some fresh tomatos and in about 20-30 minutes you have a good wholesome dinner!! To add some zest we sometimes add a can of green chili’s to the noodle mixture.

JUEVOS RANCHEROS
I can Black Beans
I jar salsa
Eggs
Torillas
Cheese
Mix the beans and salsa in a wok and bring it to a boil. Crack eggs in, let the poach. Cover until eggs are done all the way through. Tkae off heat. Cut up eggs. Throw it in a tortilla (preferabbly corn) throw a little cheese and sour cream and gobble them up!!
Any Mexican food is a quick go to dinner. Tacos, Burritos, Nachos, Juevos Ranceros! Yum!

My quick go to meal pan sired chicken! yum, yum! takes no time at all. all you do is sire the chicken on both sides on the stove (just browning it)in a pan that can be place in the oven, then place the chicken in the oven for about 8 minutes and then you have yummy pan sired chicken.

My quick and easy dinner is called Cowboy Stew. Baked beans, corn in a can, and stewed tomatoes all mixed together on the stove for 10 mins poured over tortilla chips. Then I put cheese and sour cream on top.

My go go meal is Tuna Noodle cassrole: Make mac and cheese the regular way, add one can tuna and one can cream of Mushroom. Stir up and put in 8×10 pan. Crumble Lays chips on top. Bake until bubbly. Easy and yummy.

For a quick dinner, I like to make taco soup. I always have cans of beans on hand, add some ground beef (if I have it) and some chili powder. If I think about it in the morning, I throw it in the croc pot so I can come home to a wonderful smelling house!

My quick dinner is Broccoli and Sun-dried Tomatoes Pasta. Broccoli and sundried tomatoes sauteed in olive oil and garlic, with cooked penne pasta and served with grated parmesan cheese. It’s quick and easy. Although, I’m in panic mode because my local dollar store stopped carrying jars of sun-dried tomatoes!

My quick dinner is enchilada casserole! In a pan I throw in my tortillas, cream of mushroom, cream of chicken and can of enchilada sauce. THrow in my olives and onions and choice of pre-cooked meat (chicken, usually). Top with cheese and another layer of tortillas. Cook and EAT!! Yum yum!

Pancakes, fruit, banana bread (usually from the freezer), and sausage. The kids eat so much more of the breakfast dinner than a regular dinner. We call it backwards night and eat in pajamas.

My quick to go dinner is shepherds pie. I fry ground beef ahead of time and freeze it in 1 lb. bags. I just thaw it quickly, throw in a bag of frozen vegetables, some instant mashed potatoes, and dinner is done in no time!

I try to plan ahead but there are always those times when something comes up and plans change! My go-to quick meal is baked potatoe soup. I change it up every time by adding whatever veggies I have on hand, carrots, peas, broccoli, corn, ect. Its an easy dish to make and goes a long way, plus it is super CHEAP!

My quick dinner is usually baked potatoes with all the fixings. You can pile on a lot of extras that are just laying around in your fridge and my son enjoys this because he gets to decide what he wants on his.

Definitely Mexican Rice Bowls:
1 box Near East Rice Mix- Spanish Rice flavor
Mix according to directions on box.
Add 1 can corn
1 can black beans
1 can diced tomatoes with green chilies in it
Serve plain or with dollop of sour cream, salsa and avocado if you have it.
Yum!
