Using Bone-In Chicken, Part 2
By · May 22When I wrote about using bone-in chicken, one method I told you about was boiling and shredding the chicken. Several of you wondered what I do with the shredded chicken, so I thought I would share with you some of my family’s favorite recipes using pre-cooked shredded chicken.

BLT Chicken Pasta Salad
I got this recipe from a recipe exchange group from a fabulous lady named Jennifer. It is one of my kidlet’s favorite dinners!
Dressing:
1/2 cup mayonnaise
1/3 cup water
1 Tbsp. BBQ sauce
1 1/2 tsp. white vinegar
1 1/2 tsp. dried minced onion
1/4 tsp. garlic powder
1/4 tsp. black pepper
Mix all dressing ingredients and refrigerate
1 lb. cooked, shredded chicken
8 oz. of pasta (we like mini shells or wheels)
1 pkg. bacon, cooked and crumbled (I buy pre-cooked bacon and use that)
1 head of lettuce, chopped (I use Romaine)
1 bunch green onions, sliced (optional)
1 large tomato, chopped (optional)
Ranch Dressing
Boil pasta, when cooked, drain and run cold water over to cool. Mix pasta, chicken and dressing. Place lettuce on each plate, top with chicken/pasta mixture. Top with green onions, tomatoes and bacon. Top with Ranch Dressing, you don’t need much!
Chicken Tacos
1 lb. cooked, shredded chicken
1/2 onion, chopped
Salt
Ground Cumin
Chili Powder
Garlic Powder
Corn Tortillas
Shredded Cheese
Lettuce
Tomatoes
Salsa
Pour a little oil in the bottom of a frying pan, saute the onion until it is clear. Add the chicken and a little water to moisten the chicken. Season with salt, cumin, chili powder and garlic powder {you could use packaged taco seasoning if you prefer}. Heat just until warmed. Lay tortillas flat on a cookie sheet, top each with a few tablespoons of chicken and then sprinkle each with cheese. Place this under the broiler for just a minute until the cheese is melted. Remove from the oven and top each with lettuce, tomatoes and salsa.
Chicken Pillows
{here is a link to a slightly different recipe, but you get the general idea of what they will look like}
1 lb. cooked, shredded chicken
8 oz. cream cheese, softened
3 Tbsp. milk
Garlic Powder, to taste
3-4 Tbsp, finely minced onion or 1 bunch green onions
Salt, to taste
2 pkg. refrigerated crescent rolls
Combine cream cheese, milk, garlic powder, onions and salt. Add chicken to mixture. Open crescent rolls and unroll. Using a teaspoon, drop chicken mixture into middle of crescent rolls. Bring back edges of triangle together and then roll up so it looks like a little pillow. Place on a greased cookie sheet. Bake at 350 degrees for 15 minutes.
Chicken Broccoli Casserole
1 lb. cooked, shredded chicken
1 1/2-2 stalks broccoli, chopped {or you could use 1 pkg. frozen}
1 can Cream of Chicken Soup
1/2 C. mayonnaise
1/2 C. shredded cheddar cheese
1 tsp. lemon juice
Cooked pasta or rice {I prefer rice, but the rest of the family prefers pasta, we use egg noodles}
Cook pasta or rice. Place broccoli in a saucepan with a little water and cover. Cook over medium heat until broccoli is partially cooked. Mix mayonnaise, cheese and lemon juice. Add chicken and pasta or rice and mix. Add broccoli and mix. Place all in a greased casserole dish. Bake for 30 minutes at 350 degrees.
White Chicken Chili
This is another recipe I got from a recipe exchange from a great lady named Richelle
1 lb. cooked, shredded chicken
1/2 onion chopped
1/2 t. garlic powder
1/2 T. oil
1 1/2 C. water
2 chicken bouillon cubes
1/2 tsp. salt
1 tsp. oregano
1 tsp. ground cumin
1/4 tsp. pepper
1 can (4 oz.) diced green chilies
2 cans white beans, drained and rinsed
1/2 lb. mushrooms, washed and sliced
1/2 C. sour cream
1/4 C. whipping cream (I often do not have cream on hand, but I have whole milk and so I use it instead)
In a large pot, saute onion in oil until onions are translucent over medium heat. Add chicken and seasonings and stir. Heat just until warmed. Add water and stir. Add green chilies and mushrooms and bring to a boil. Reduce hear and simmer for 30 minutes. Add sour cream and cream and serve!
Chicken Salad Sandwiches
My family just likes plain chicken salad sandwiches with nothing added to it. I just pull the chicken out of the fridge and mix it with mayonnaise, salt and pepper. We just top the bread with some lettuce and then the chicken salad, and we are finished!

Pizza
I have already shared with you my homemade pizza recipe. Chicken is one of our all time favorite toppings. We especially love BBQ Chicken pizza.
I hope you all enjoy these recipes and they give you a little inspiration to use cooked shredded chicken from bone-in chicken. Using bone-in chicken truly saves me so much time and money.

Just curious – last time you posted about this I tried boiling/shredding my own chicken just as you described. Then I put it in a salad, but it tasted kind of grainy and mushy. Is it possible to overboil when you’re doing chicken this way? My thought is that this may be what happened. Any ideas?

That hasn’t ever happened to me, but that is a possibility. You just want to cook it until it is no longer pink.
I have another though though too. Do you typically buy frozen, boneless, skinless chicken breasts? Fresh chicken is much more “squishy” than frozen which is a little more dry. It is a possibility that it is just a different taste. Although that wouldn’t account for the grainy texture, so I am a little puzzled?

I use canned chicken already shredded it’s still a bit stringy but better than having to cook or roast a whole chicken.But it’s not as economical for those living a frugal lifestyle unless they have a sale and than use a coupon.
I will try the chicken pillows, I also like chicken and dumplings, Bisquick has a great recipe for that and is economical. I love using recipes that are economical and will soon be blogging about that.

My husband who is the cook in the family says it is possible to overboil the chicken. I will be making chicken tomorrow to package a save.
